History and Culture

“La Línea,” due to its proximity to the Dominican-Haitian border, came to be located in the northwestern region of the island of Hispaniola (Santo Domingo). The towns of Villa Vásquez, Guayubín, Montecristi, Santiago Rodríguez, Manzanillo, Loma de Cabrera, Capotillo, and Dajabón were very far from the rest of the country at a time when travel was done on horseback along harsh, lonely paths, before the road-building efforts that began during the U.S. military occupation of 1916–1924.


Indiscriminate logging and the use of burning as a tactic to eliminate guerrilla fighters opened the way for the spread of bayahonda, leaving spaces where oregano grew vigorously, and marking the Northwest Line as a territory shaped by adversity and a constant struggle for survival.


Popular imagination created the legend that the abundance and exquisiteness of oregano meant that, when slaughtered, the goats were already “seasoned.” They were considered the tastiest in the world. The challenge, then, was to satisfy the enormous demand, overcome great distances, and face the lack of technology to preserve meat.


In response, colonial methods used to preserve beef and pork were revived, relying on salt, lemon, sour orange, and the sun as natural preservatives. The goats were deboned, seasoned, and laid out under the relentless regional sun, allowing them to be transported long distances without spoiling and turning them into a highly valued food.


Even today, it is not uncommon to find this practice, and because of the exquisite flavor of the stew, people still claim that Liniero goat, naturally seasoned with oregano, is the best in the world.

Recipe and Preparation

PREPARATION
Gather all ingredients and utensils.
Clean and slice the onion and peppers into thin julienne strips.
Peel and crush or mince the garlic, removing the germ.
Finely chop the broadleaf cilantro (culantro) and the cilantro.


WASH AND SEASON THE GOAT
Clean the meat and place it in a large bowl with water and the juice of the sour oranges. Drain.
Optional: wash again with bitter brewed coffee to help reduce strong odors.
Rinse well, drain, and let rest for 20 minutes.
Season with salt, pepper, oregano, garlic, onion, thyme, and peppers.
Mix well, cover, and marinate for at least 2 hours (preferably overnight to deepen the flavor).


STEW THE GOAT
Heat a heavy pot (caldero) over medium heat. Add the oil and sugar, letting it caramelize.
Drain the meat pieces (reserve the marinade) and place them in the pot one by one. Brown on both sides.
Add the rum carefully (it may flambé). Stir and let the alcohol evaporate.
Continue cooking until the liquid released by the meat evaporates and the meat is well browned.
Dissolve the tomato paste in 1/2 cup of water and add it to the pot. Sauté and mix well.
Add the reserved marinade with all the vegetables.
Add part of the water, reduce heat to medium, cover, and cook until the meat starts to tenderize.
Add water little by little as the sauce reduces, keeping it thick and velvety.
Stir and check frequently. Taste and adjust salt if needed.
When the meat is tender, remove from heat and serve hot.
