What does the "Aquí Se Come Bueno" award consist of?
This project, currently underway between the Dominican Flavors Foundation and the Ministry of Culture, seeks to create a distinctive mark that we have called "Here you eat well, Dominican gastronomy," which will be placed in establishments and restaurants, both general and international, that by including Dominican dishes in their offerings, highlight the living heritage of our gastronomy.
The initiative aims to promote Dominican culinary culture both locally and internationally. The distinction will be awarded to restaurants and establishments that adhere to the principles and safeguarding of traditional Dominican cuisine. The pilot project will begin in the Colonial Zone.
Justification
Culinary tourism allows us to delve into the culinary world where we can experience thousands of flavors that characterize our identity, our country, and our regions. By rescuing the authentic value of rich and unique recipes based on distinctly Dominican dishes, we are sharing, in each gastronomic offering, a tradition of our people, so historical that it takes us back to our origins, practices, skills, and the resources of the kitchens used by our ancestors.
Therefore, restaurants and food establishments play a vital role in promoting our culinary offerings, including Dominican dishes, with the main objective of rescuing our gastronomic heritage, exalting our values and identity, and recovering products and traditions that may be disappearing over the years, so that future generations will have a legacy and can continue to promote and proudly uphold Dominican culinary culture.
Restaurants and food establishments serve as interpretation centers that not only promote, but also motivate tourists or visitors to travel to the interior of the country to personally experience the communities or routes that promote that local cuisine.
As cuisine evolves, international restaurants can also creatively and innovatively develop their own interpretations of Dominican dishes, preserving the essence of the original recipes while incorporating more avant-garde touches. These cultural exchanges also contribute to projecting Dominican haute cuisine internationally, without losing its history, evolution, and the influences that have made it an integral part of our gastronomy.
